With Winter quickly approaching I’ve been trying to get as much fresh fruit into my diet as possible. Two reasons: it’s still kinda fresh (ish) and the boost of vitamin C is a must during the start of cold and flu season.
I’ve never made my own salsa of any kind, I’m not even sure you can classify this recipe as ‘salsa’ but that’s what I’m calling it!
- 10-15 Strawberries diced
- 1 Peach diced (I used these fun ‘doughnut’ peaches)
- 1 Kiwi, peeled and diced (I used a ‘hybrid’ kiwi)
- 1 Honey Crisp or Pink Lady Apple diced, peel left on
- 1 Tablespoon Sugar (or whatever sugar sub you choose)
Dice up all the fruit, place it in a bowl with a lid. Toss in the sugar and close the lid. Shake the bowel to really get that sugar all around the fruit and to get the fruit juices mixed well with the sugar. You can eat right away, or I like to refridgerate it for an hour or 2.
Could eat this mixed into some yogurt or like I did with Nilla Wafers or Graham Crackers. Quick, easy, saves well, and very good!
