Avocado Lime Cheesecake

Over the last week I’ve been on an avocado binge. After eating them in guacamole, on toast, with eggs, in a salad, and with tuna I found myself on Pinterest looking for a sweet options: Avocado Cheesecake. Two of my FAVORITE things put together.

I found a few different recipes. Some had lime, some didn’t. I wanted the lime and I wanted something different, cilantro! It’s like guacamole, but cheesecake. 🙂

Prep time is about 20 min, very easy.

What you’ll need for the crust:

1 1/2 Cups Graham Cracker Crumbs

1/4 Cup Sugar

6 Table Spoons Butter (softened)

What you’ll need for Cheesecake:

1 1/2 Cups Heavy Whipping Cream

1 Cup Sugar

2 ripe avocados (skinned/pitted)

8 oz pkg Cream Cheese (softened)

1 Lime

1 Pinch Salt

2 Table Spoons Fresh Cilantro Finely chopped

Directions:

  1. In a bowl combine Graham cracker crumbs (1 1/2 cup), Sugar (1/4 cup), and softened butter (6 table spoons). Use a spatula or your hands to combine, then spread evenly over bottom of pie dish forming a crust. I used a square 8×8 glass dish. Set aside.6
  2. In a microwave safe container add heavy whipping cream (1 1/2 cup). Microwave until WARM, do not boil. Can also do this on the stove. I used the microwave to save on dishes. Once out, pour in the sugar (1 cup) and still until sugar is dissolved. Set aside to cool.8
  3. In a large mixing bowl add 2 peeled and pitted Avocados (I cut mine into small chunks)Softened cream cheese (8 oz), and the heavy cream/sugar. Mix with hand mixer or stand mixer until combined and smooth. Next add in the juice of 1 lime, the cilantro, and a pinch of salt. Mix again until combined and smooth.
  4. Pour the Cheesecake mix onto crust, spread evenly on top.

     

  5. Cover and place in freezer for at least 4 hours.

*If you freeze longer than 4 hours, move to fridge about an hour before serving so it has a chance to thaw just a bit before serving.
