Creamy Pesto Chicken Pasta

A quick and easy Pasta bake, that my family enjoyed. Prep time is somewhere around 15-20 min and bake time is 20 min. I’m no chef so hopefully my instructions are easy.

What you’ll need:

1 bag pasta of your choice (1lbs bag)

1 32 oz Chicken Bone Broth

1 6.7oz jar of Pesto, only use HALF the jar (Walmart)

1 8oz pck Cream Cheese

1 2.5oz can of chicken

1 can of Black Olives use half or a small can if available (CHOPPED)

1 1lb bag of Italian Style Cheese (Walmart) (2 cups needed)

Olive oil 1 table spoon



Pre heat oven to 400

Set aside 1/2 cup chicken bone broth.

In a large pot, add remaining bone broth along with 2 cups water. Add pasta and cook until done, drain.

While pasta is cooking, in a deep skillet add chicken, 1 table spoon olive oil, and salt & pepper to taste. Cook chick on medium heat about 5 min (no longer pink).

Next add the half jar of pesto, olive (chopped), and 1/2 cup of remaining bone broth. Stir and heat (do not boil).

Next cube the cream cheese and add to skillet with chicken, continue to stir until cream cheese is melted.

Steam spinach in microwave per instructions. You can use entire bag or less, we usually use 1/2 of the bag.

In a 9 x 13 glass baking dish combine pasta, steamed spinach, and chicken mix. Stir in 1 cup of shredded cheese. Then top with 1 cup of shredded cheese.

Bake uncovered for 18-20 min until cheese is melted and crisp at the edges.
